Restaurant staff full of TSTC grads
The quality of Executive Chef Dannie Williams II’s preparation in the Culinary Arts Program impressed him so much that he almost exclusively hires TSTC graduates for the kitchen at 135 Prime in Waco.
“My team shares the same passion, work ethic and creativeness that allow us to feed off of one another,” he said.
“One small part of my job is to create a new special each week. I give every member of my team a week to come in and develop a special of their own; this allows them to be a part of the creative process and build confidence.”
Williams does not idly sit in an office pushing statistics. He organizes party events, keeps inventory, oversees the menu, evaluates personnel and juggles the budget. “I even have to occasionally roll up my sleeves and fix a dishwasher or some plumbing. Really, there are a lot of hats that my job requires me to wear,” he concluded.
